Oro di Diamanti’s Ailanthus honey is produced from the blossoms of Ailanthus altissima, a spontaneous plant widely found throughout Italy and appreciated for its intensely perfumed nectar.
The hives are positioned in carefully selected hillside areas with abundant blooms and far from potential sources of contamination, ensuring a pure and naturally aromatic product.

The apiaries are managed according to certified organic beekeeping, with biodynamic principles supporting soil vitality and biodiversity across the estate.
Processing is deliberately minimal: the honey is extracted at low temperatures and filtered gently, preserving the characteristic fruity notes and the distinctive peach tea finish that define this unique monofloral honey.
