Gaudium represents the maximum expression of the Pignoletto cultivated by Oro di Diamanti. The grapes, selected and harvested by hand, come from the company’s vineyards located in the Bologna hills, in an area characterized by clayey soils and a North-West exposure that favours slow ripening and great aromatic freshness.
The processing follows organic methods with the integration of biodynamic techniques, while in the cellar, soft pressing and spontaneous fermentations are favoured. The result is an elegant, natural, complex, and authentic sparkling wine.
